Jet substructure measurements in heavy-ion collisions open up new ways to explore the modifications of jets in a dense plasma to extract its properties. In this context we discuss the SoftDrop declustering that singles out two subjets at maximal angular separation and find that it is sensitive to a large range of effects, such as medium-induced radiation, colour coherence and medium recoil. The discussion is meant to be informal and focus on qualitative features.
