Processes with jets are ubiquitous at the LHC. Due to the multiple scales involved, the description of these processes requires an accurate modelling of QCD in disparate kinematical regimes. A comprehensive theoretical understanding of the related observables can only be reached by studying jet processes both from a fixed order and an all-order perspective. In this talk I will introduce some observables which can act as probes of QCD dynamics in the infrared region. I will discuss potential applications of these observables both in higher order calculations based on non-local subtraction methods as well as in all-order computations for processes with one or more jets.
